Pav Bhaji

Ingredients

Shayona Pav Bhaji Masala (to taste)
• 4 to 5 medium potatoes
• 150g peas
• 75g carrots
• Mixed Vegetables: tomatoes, peppers, coriander, cabbage, cauliflower
• 2 tomatoes, finely chopped
• Salt, to taste
• 100g butter or oil (plus extra for toasting pav)
• Pav buns



Instructions

  • Peel and boil the potatoes until soft, then mash lightly. Boil the peas, carrots, and any additional vegetables such as cabbage or cauliflower until tender.

  • In a large frying pan, heat 100g butter or oil over a medium heat. Add the chopped tomatoes and salt, then stir gently.

  • Add the boiled vegetables and mashed potatoes to the pan.

  • Stir in Shayona Pav Bhaji Masala (to taste) and cook on a low heat for 2 to 3 minutes.

  • Turn off the heat and keep the pan covered for 5 to 7 minutes to allow the flavours to develop.

  • Slice each pav bun in half and shallow fry lightly in butter or oil until golden.

Serve

Serve the hot bhaji alongside the toasted pav and enjoy. Add a slice of lemon and diced raw mango as a topping for an extra burst of flavour.

Cooking Time

Approximately 35-50 minutes, including preparation and cooking. Cooking time may vary with larger quantities.
