• Shayona Pav Bhaji Masala (to taste) • 4 to 5 medium potatoes • 150g peas • 75g carrots • Mixed Vegetables: tomatoes, peppers, coriander, cabbage, cauliflower • 2 tomatoes, finely chopped • Salt, to taste • 100g butter or oil (plus extra for toasting pav) • Pav buns
Instructions
Peel and boil the potatoes until soft, then mash lightly. Boil the peas, carrots, and any additional vegetables such as cabbage or cauliflower until tender.
In a large frying pan, heat 100g butter or oil over a medium heat. Add the chopped tomatoes and salt, then stir gently.
Add the boiled vegetables and mashed potatoes to the pan.
Stir in Shayona Pav Bhaji Masala (to taste) and cook on a low heat for 2 to 3 minutes.
Turn off the heat and keep the pan covered for 5 to 7 minutes to allow the flavours to develop.
Slice each pav bun in half and shallow fry lightly in butter or oil until golden.
Serve
Serve the hot bhaji alongside the toasted pav and enjoy. Add a slice of lemon and diced raw mango as a topping for an extra burst of flavour.
