Mixed Veg Sabji

Ingredients

  • 3 teaspoons oil
  • 1 medium potato, chopped
  • ½ medium carrot, chopped
  • 75g cauliflower florets
  • 4 green beans, chopped
  • 50g peas
  • ¼ medium capsicum pepper, chopped

Tomato purée

  • 2 tomatoes, chopped
  • 1 small piece cinnamon
  • 5 cloves
  • 2 cardamom pods

Instructions

  • Heat 3 teaspoons oil in a frying pan. Add potato, carrot, cauliflower, beans, peas and pepper. Lightly sauté until partly cooked. Set aside.

  • Blend tomatoes with cinnamon, cloves and cardamom until smooth.

  • Heat 4 teaspoons oil in a deep pan. Add bay leaf and Shayona Cumin Seeds. Once fragrant, add green chilli and ginger and stir briefly.

  • Sprinkle in Shayona Sabji Masala, turmeric, Kashmiri chilli powder and salt. Mix, then add the tomato purée. Cook until the oil begins to separate.

  • Reduce heat. Slowly add whisked yoghurt while stirring continuously.

  • Add the sauteed vegetables and water. Simmer for 10 minutes.

  • Turn off the heat. Stir in cream, Shayona Kasuri Methi and coriander .

Serve

Enjoy warm with roti, puri or Shayona Paratha.
