Bateta nu Shaak (Gujarati Potato Curry)

Ingredients

  • 4 medium Potatoes, peeled and cut into small cubes
  • ½ teaspoon Shayona Mustard Seeds
  • ½ teaspoon Shayona Cumin Seeds
  • ¼ teaspoon turmeric
  • 1 teaspoon chilli powder
  • 1 teaspoon chilli and ginger paste
  • 1 tablespoon coriander and cumin powder
  • 1 teaspoon sugar (optional)
  • 2 tablespoons oil
  • Juice of half a Lemon
  • Salt, to taste

To Garnish

  • 2 tablespoons chopped fresh coriander

Instructions

  • Peel the potatoes, cut into small cubes, wash, then set aside.

  • Heat the oil in a pot over a medium heat.

  • Add the Shayona Mustard Seeds and Shayona Cumin Seeds. Allow them to splutter.

  • Stir in the chilli and ginger paste.

  • Add the potato cubes, then add salt and turmeric. Stir well.

  • Cover and cook on a low heat, stirring occasionally, until the potatoes are soft.

  • Add the coriander and cumin powder and chilli powder. Stir well to combine.

  • Remove from the heat, squeeze over the lemon juice, and garnish with chopped coriander.

Serve

Serve warm with rotis or puri.

Cooking Time

Approximately 25-40 minutes, including preparation and frying. Cooking time may vary with larger quantities.
